The invention discloses a cooking method of deep-fried twisted dough sticks, and belongs to the technical field of
food processing. The cooking method comprises the following steps of firstly, heatingand
steaming the made materials of the deep-fried twisted dough sticks, and then spraying high-pressure hot oil
fog which is formed after heating, pressurizing and atomizing onto the steamed materials of the deep-fried twisted dough sticks; or firstly, spraying the high-pressure hot oil
fog which is formed after the heating, the pressurizing and the atomizing onto the materials of the deep-friedtwisted dough sticks, and then heating and
steaming the materials of the deep-fried twisted dough sticks, onto which the high-pressure hot oil
fog is spayed. The invention further discloses cooking equipment of the deep-fried twisted dough sticks. The shortening equipment comprises a steam chamber, an oil spraying chamber, a deep-fried twisted dough stick material conveying device and a high-pressure hot oil fog spraying device, wherein the deep-fried twisted dough stick material conveying device penetrates through the oil spraying chamber from the steam chamber, or penetrates through the steam chamber from the oil spraying chamber. Through the adoption of the cooking method disclosed by the invention, original
flavor of the deep-fried twisted dough sticks is maintained, and the danger ofrepeated deep-frying is also avoid, so that health is facilitated, consumption of
edible oil can be saved, the making cost is reduced, and the condition that after the oil is deteriorated, waste is caused, can be avoided.
