brewing. The method uses 65-75% red highland
sorghum and 25-35% unhulled
mung bean as main materials, and obtains
mung bean mash containing
fermentable sugar and
protein by double-
enzyme step-by-step saccharification of the mung bean. The mung bean mash is mixed with highland
sorghum which is subjected to high-temperature kneading,
steaming and pasting, and is inoculated with low-temperature Daqu of the light-
flavor type to perform 28-day ground-tank
solid-state
fermentation. The liquor is distilled and 65% vol middle-liquor is intercepted, and then is subjected to cycle cold-heat alternation aging for not less than 3 years, so as to promote esterification and liquor body stability by using seasonal
temperature difference, and to form a composite
flavor with mung bean bean flavor and light-flavor aged flavor. The application improves the
utilization rate of mung bean raw materials, and the obtained liquor is mellow and sweet, and has rich flavor levels, and the process is stable and reliable.
