The method for extracting the phycoerythrin by drying the porphyridium solution with assistance of the spray freeze dryer comprises the following steps: drying a porphyridium solution by using a spray freeze dryer so as to rapidly and effectively obtain dried porphyridium powder; mixing the dried porphyridium powder with water at certain mass-volume ratio, and obtaining a crude phycoerythrin extract by adopting a freeze-thaw method; performing one-step purification on the crude phycoerythrin extract so as to obtain a high-concentration high-purity phycoerythrin solution; and then, preserving the high-concentration high-purity phycoerythrin solution in a refrigerator at 4 DEG C or directly using the high-concentration high-purity phycoerythrin solution. By preparing the dried porphyridium powder by adopting a vacuum spray freeze drying way, the dried porphyridium powder prepared by the method is uniform in particle size, as well as fine and smooth in texture; and thus, phycoerythrin extraction is facilitated. In addition, the phycoerythrin is purified by adopting an one-step purification way, so that, the method is simple in process, and capable of achieving a purified phycoerythrin solution concentration up to 0.9 g/L or above as well as a purity PI value up to 2.2 or above; and thus, requirements on food-grade additives are met. The porphyridium concentrated harvesting method saves surfactant and flocculant, but completely depends on the exopolysaccharides produced by porphyridium to achieve the effects of foam concentration; when the porphyridium is cultured to a stable growth period and secretes a certain quantity of the exopolysaccharides, by changing the structure of a gas distributor to produce tinybubbles, high-concentration harvesting of the porphyridium can be achieved. The porphyridium concentrated harvesting method can achieve concentrating effects by 60 times, greatly save time of centrifugation and reduce the harvesting cost.
