The method involves constructing three viscosity systems (3.47–15.19 mPa·s) by compounding concentrated fish oil and castor oil at a specific volume ratio. Using a 3% polyvinyl alcohol aqueous solution as the continuous phase, water-in-oil fish oil microspheres are prepared under constant pressure in a cross-shaped microfluidic chip. By controlling the viscosity of the oil phase, the microsphere particle size can be precisely controlled within the range of 53.89–72.34 μm, with a coefficient of variation ≤5% and regular morphology. The obtained microspheres exhibit excellent particle size stability under pH 5–7 and 0–2% NaCl conditions. The high-viscosity microspheres show significantly lower acid values ​​and thiobarbituric acid reactant values ​​compared to the low-viscosity group under storage conditions of 4–60℃, with an oxidation stability improvement of over 30%. In vitro digestion experiments show that the low-viscosity microspheres reach peak free fatty acid release rate after 120 min, while the high-viscosity group exhibits a sustained-release effect.
