The invention relates to a method for preserving a
lotus root with garlic extract and
onion extract. The method comprises the following steps of: (1) preparing crude garlic extract; (2) preparing crude
onion extract; (3) preparing compound
preservative: weighing the crude garlic extract and dissolving the crude garlic extract in water, adding the crude
onion extract,
pullulan and konjac gum in sequence after the crude garlic extract is fully dissolved and stirring the solution uniformly, adjusting the pH of the solution to 4.6-4.8 with
citric acid and diluting the solution with water, blending the solution with ultrasonic wave, and cooling the solution to
room temperature for standby use, then the compound
preservative is prepared; (4) selecting the
lotus root raw materials; (5) washing and
cutting the
lotus root; (6) sterilizing; (7) keeping
brittleness; (8) filming; and (9)
vacuum packing and refrigerating the
lotus root. According to the method for preserving the
lotus root with the garlic extract and the onion extract, the garlic extract and the onion extract are used to prepare the compound film
preservative serving as the preservative of the
lotus root with skins, the compound film preservative has a good preservation effect, and the preservation period can be up to 5 months or above, and thus the problems of
browning,
hardness decrease and
weight decrease in storing the fresh lotus root are solved.
