The invention provides an organic camellia oil production process which comprises the following steps of: drying; sorting; uniformly stacking, bagging; squeezing oil; carrying out molecular deodorization; and freezing. According to the invention, camellia fruits are dried with hot air at constant temperature, and hot-air temperature is controlled to be between 30 DEG C and 50 DEG C to prevent the raw material from being burnt and protect the original nutritional components and active components in the raw material from being damaged, so that the original nutritional components contained in the camellia oil are retained. The organic camellia oil production process provided by the invention can increase the camellia oil contained in same camellia fruits by 20%, save the cost by 20% and increase the nutritional components by 35%.
