fiber ice cream and a preparation method thereof.The
ice cream is composed of 3.30% of skim milk
powder, 7.50% of white granulated
sugar, 2.00% of
maltitol, 7.00% of resistant
dextrin, 3.00% of
erythritol, 0.60% of a compound
emulsion stabilizer, 0.08% of salt, 1.09% of matcha
powder, 9.00% of coconut pulp and the balance skim milk; the compound
emulsion stabilizer is composed of
phospholipid,
locust bean gum and
carrageenan in a ratio of 1: 1: 1, the weight ratio of
skimmed milk to coconut pulp is 7.5: 1, and the weight ratio of resistant
dextrin to
erythritol is 7: 3. The preparation method comprises the following steps: dry material pretreatment, base material mixing, secondary homogenization, sterilization, matcha
powder addition at low temperature in an aging stage,
nitrogen protection,
congelation forming and hardening. Through the synergistic effect of the compound
emulsion stabilizer and the raw materials in a specific proportion, low-fat and high-
fiber effects are achieved, fine and smooth taste and pure
flavor are obtained at the same time, the process is stable, and the method is suitable for industrial production.
