Blueberry fruits are adopted as raw materials, crushed and pulped, an ethanol solution with the mass fraction being 40% is adopted as an extraction solution, cellulase is added, and extraction is carried out under ultrasonic assistance; centrifugal separation is carried out, precipitation and repeated digestion are carried out once, extraction solutions are combined and concentrated, then the blueberry anthocyanin is promoted to be dissolved out through a high-voltage pulse electric field, and the dissolving-out amount of the blueberry anthocyanin of the extraction solutions is increased; then macroreticular resin adsorption, alcohol washing, concentration and freeze drying are carried out, and therefore the method for extracting the blueberry anthocyanin is obtained. A living example proves that operation is controllable, the method is unique, the production cost is reduced, pollution is avoided, the extraction rate of the prepared blueberry anthocyanin is as high as 80% or above, the purity reaches 75% or above, and higher medical care value and a wider practical application field are achieved.
