The invention provides a biological macromolecular
coating anti-staling agent for litchi. The anti-staling agent is prepared from effective components of gamma-
polyglutamic acid or gamma-polyglutamine,
plant essential oil,
sucrose ester and CaCl2 serving as raw materials; and the raw materials comprise the following components in percentage by weight: 0.2 to 2 percent of gamma-
polyglutamic acid or / and gamma-polyglutamine, 0.1 to 1 percent of
sucrose ester, 0.03 to 0.1 percent of
plant essential oil, 0.5 to 2.0 percent of CaCl2, 0.1 to 0.2 percent of Tween-80 and the balance of water, wherein the total amount of the raw materials is 100 percent. When the biological macromolecular
coating anti-staling agent for the litchi is used for fresh-keeping treatment for the litchi, the low-temperature fresh-keeping period can reach 40 to 60 days, the
flavor of pulp is good, the
skin color is good, and the
shelf life is long and can reach 2 to 4 days; and the fresh-keeping period at the normal temperature can reach 6 to 8 days. Moreover, the biological macromolecular
coating anti-staling agent for the litchi has good inhibiting effect on
pathogenic bacteria easily appearing in the storage process after the litchi is picked, has simple
processing process, is
pollution-free, accords with the direction of development of the current fruit and vegetable anti-staling agent, and has good development and application potential.
