The invention provides a process for
brewing wine by using
cyperus esculentus and
soybean meal, and belongs to the field of
wine brewing processes, the
wine brewing process comprises the following steps: carrying out grain moistening treatment on 50-54% of the total weight of
sorghum to obtain a grain moistening main material I; adding the pretreated
cyperus esculentus and micro-fermented rice husks into the grain moistening main material I, and
steaming the grains in a steamer to obtain a cured material; mixing fermented grains and
soybean meal into the cured material to obtain a mixed material; and adding high-temperature
yeast into the mixed material, carrying out round stacking and
fermentation to obtain round fermented grains, and distilling to obtain the wine. Through innovative combination of the
sorghum, the pretreated
cyperus esculentus, the micro-fermented rice
husk and the
soybean meal, synergistic utilization of respective
raw material advantages is fully exerted, breakthrough progress is made in the aspect of efficient
fermentation, high wine yield is obtained, meanwhile, great progress is made in the aspect of
flavor improvement, and the method is suitable for large-scale popularization and application. And a new technical path and thought are provided for
sustainable development of Maotai-
flavor liquor and even the whole liquor making industry.
