The probiotic bead comprises a flowing state oil phase with dispersed bacteria, a solid lipid protection layer and a gel phase; a supercooling medium is released in the dropping process of the probiotic bead, so that the molten solid fat is instantly cooled to form a solid lipid protection layer on the outer layer of the flowing state oil phase; solid particles such as silicon dioxide are added into the solid lipid protection layer, so that holes in the gel phase can be supplemented in time when a large number of hole structures are generated by enzymolysis in the intestinal digestive tract, and the structural integrity of the probiotic bead is kept; and in the gel phase, a condensation-induced network gel technology is adopted, and whey protein isolate gel is induced by edible ethanol, so that the gel phase with a more compact structure can be formed. The probiotic bead enriches the form of probiotic products, realizes high entrapment efficiency of the probiotics and high survival rate of gastrointestinal tracts, and delivers the probiotics to the colon to complete intestinal colonization.
