This application relates to a method for deodorizing
tilapia using
yeast fermentation and its application, belonging to the field of
aquatic product processing and
flavor control technology. This application aims to solve the technical problems of complex deodorization processes, unstable
flavor improvement, and the tendency to produce off-odors in existing
tilapia technologies. The
tilapia deodorization method using
yeast fermentation of this application includes the following steps: S1, adding highly active dry
yeast to a
sucrose solution to prepare a yeast culture; S2, heating the yeast culture and adding it to tilapia meat, adjusting the pH of the
system, fermenting, and filtering after
fermentation to obtain deodorized tilapia meat. The method provided in this application utilizes the
metabolic activity of yeast to reduce the content of fishy or irritating volatile substances such as 2,3-octanedione, 2,4-decadienal, and 2-nonenal in tilapia, and increases the content of sweet-smelling components such as
ethanol,
phenethyl alcohol, 2-acetylpyrrole, and esters, thereby achieving deodorization and
flavor enhancement.
