The preparation method comprises the following steps: dropwise adding a carvacrol mixed solution into a chitosan solution, and homogenizing and mixing to obtain a chitosan / carvacrol mixed solution; dropwise adding the chitosan / carvacrol mixed solution into a citric acid solution, and carrying out homogeneous mixing to obtain a reaction solution; after the pH value is adjusted, heating reaction is conducted, a reaction product is subjected to aging, liquid nitrogen freezing and drying in sequence, and the chitosan-citric acid-carvacrol essential oil sustained-release microcapsule is obtained. According to the microcapsule based on CS-CA esterification cross-linking synchronous amide condensation reaction (amidation), efficient loading and controllable release of carvacrol are achieved by optimizing reaction conditions, and the strategy not only provides a new thought for delivery of natural active ingredients, but also can be expanded to practical application of food-grade fresh-keeping films, bioplastics and the like.
