The invention relates to a health-care 
pumpkin seed beverage. 100 parts of finished beverage products are prepared through the following steps: weighing the following components in parts by weight: 3-8 parts of dry 
pumpkin seed products with skins, 3-5.5 parts of 
sugar, 0.05-0.35 part of an emulsifying agent, 0.01-0.3 part of dietary alkali and 0.05-0.3 part of a 
protein stabilizing agent, then adding water, and finally 
processing and compounding the dry 
pumpkin seed products with skins, the 
sugar, the emulsifying agent, the dietary alkali, the 
protein stabilizing agent and the water. The 
processing method of the health-care pumpkin seed beverage comprises the following production steps: 1) cleaning the dry pumpkin seed products; 2) 
grinding the cleaned dry pumpkin seed products into pulp; 3) separating the pulp from dregs so as to obtain serosity; 4) emulsifying the serosity, the emulsifying agent, the 
protein stabilizing agent and the dietary alkali so as to obtain feed liquid; 5) dissolving the 
sugar so as to obtain syrup; 6) compounding the emulsified feed liquid with the syrup so as to obtain a pulp material; 7) filtering the pulp material; 8) pouring the filtered pulp material into a container, and sealing the container; and 9) performing high-pressure sterilization. According to the health-care pumpkin seed beverage disclosed by the invention, a method for 
grinding all the pumpkin seeds into the pulp with 
warm water is adopted, peeling equipment is omitted, and the pulp 
grinding technology is simple; besides, the loss of 
nutrient components is avoided, and the 
heat denaturation of pumpkin 
seed protein is avoided, so that the beverage obtains satisfactory mouth feel, and products have better health-care functions.
