Compared with the prior art, the method disclosed by the invention has the advantages that soaking treatment with kojic acid is performed, so that the moisture dissipation of the russula lepida during a storage period can be delayed, occurrence of brown stains can be reduced, the descent rate of the content of amino acids in the russula lepida can be retarded, and the storage time of the russula lepida can be prolonged; besides, 0.1-0.3% of leucine is added to the kojic acid solution, so that the bacteriostasiseffect of the kojic acid solution can be further strengthened, and the occurrence of the brown stains can be effectively reduced; and kojic acid sources are rich, the fresh keeping method of russulalepida disclosed by the invention is low in cost and easy to operate, and has wide application prospects.
