The invention discloses a method for preparing freeze-dried jackfruit. The method comprises the following operation steps of: firstly, selecting disease-free, decay-free and deterioration-free jackfruit in the maturity of over 80 percent, slivering the jackfruit and excavating fruit bracts; secondly, slivering the fruit bracts, stoning and remaining flesh; thirdly, washing the flesh with flowing drinking water for removing impurities; fourthly, cutting the flesh into blocks; fifthly, sterilizing the jackfruit flesh by using a disinfectant for fruit and vegetable, rinsing clean with the drinking water, and draining away water; sixthly, freezing the jackfruit flesh to the temperature of between -28 to -45 DEC G; and finally, placing the frozen jackfruit flesh into a vacuum freezing dryer, and controlling the vacuum degree to be between 26 and 72 Pa, the cold hydrazine temperature to be between -40 and -60 DEG C, the temperature of a heating plate to be between 50 and 95 DEG C and the drying time to be 8 to 6 hours to obtain the freeze-dried jackfruit. The freeze-dried jackfruit product prepared by the method of the invention does not shrink, and can substantially maintain the color,the flavor and the nutrient components of a fresh fruit.
