The purposes of the invention are to extract anthocyanin products from ipomoes batatas by acidic oxidation potential water by adopting an economic, safe and effective problem method aiming at the problem existing in a technology for extracting anthocyanins from the ipomoes batatas and obtain starch, proteins and a mucopolysaccharide product by extraction, so that values added of the ipomoes batatas are improved, and the method for extracting the anthocyanins from the ipomoes batatas by the acidic oxidation potential water is provided for comprehensive utilization of the ipomoes batatas. The method comprises the following steps: cleaning the ipomoes batatas, soaking the artificial acidic oxidation potential water with a pH value of 2.0-4.5, crushing, pulping, separating purple sweet potato residues, naturally precipitating, performing filtration and membrane filtration twice on an upper-layer anthocyanin aqueoussolution, and absorbing, eluting and concentrating a filtrate to obtain the pasty anthocyanins; drying and crushing the pasty anthocyanins to obtain the solid anthocyanin products. The method provided by the invention has the benefits that the consumption of a chemical reagent and the water is reduced, the product yield is improved, the extracted anthocyanins are ensured to be stable in structure, the ipomoes batatas are comprehensively utilized, the values added are improved, and economic, social and environmentally-friendly benefits are good.
