The present application recovers cassava starch wastewater protein by acid precipitation method, and obtains high-activity alpha-glucosidase inhibitory peptides by heat and ultrasonic pretreatment of cassava protein to assist enzymatic hydrolysis. The peptide sequence is analyzed, the alpha-glucosidase inhibition type is determined, four cassava peptides with alpha-glucosidase activity are obtained, and their high alpha-glucosidase inhibitory activity in vivo and in vitro is verified. A new alpha-glucosidase inhibitory peptide is given, the blank in the prior art is overcome, and a new idea for high-value utilization of cassava processing wastewater is provided.
