The invention discloses a preparation method of high-
solubility aflatoxins-removed rice
bran protein. The preparation method comprises the following steps of
degreasing aflatoxins polluted rice
bran as a
raw material, crushing the degreased aflatoxins polluted rice
bran, screening the crushed aflatoxins polluted rice bran, mixing the screened aflatoxins polluted rice bran with a weak alkali solution, regulating pH to be 8.0-9.0, and performing stirring and mixing for 30-60 minutes so as to obtain a
mixed solution; performing jetting and cooking treatment on the obtained
mixed solution, then regulating pH to be 6.00, adding excess alpha-
amylase and
cellulase, performing
hydrolysis at 40-60 DEG C to remove impurities including
starch, fibers and the like, and performing centrifugal residual removal so as to obtain supernatant; and performing acid
precipitation on the supernatant to produce white
protein precipitate, performing
enzyme deactivation, performing
centrifugation, collecting
protein precipitate, performing washing with water, and performing
drying so as to obtain the rice bran protein. Through the adoption of the method disclosed by the invention, aflatoxins B1 in rice bran can be efficiently removed, the denaturation effect of strong basicity to protein and the bringing of a great quantity of
sodium salt ions can be effectively avoided, the high-
solubility aflatoxins-removed rice bran protein is mild and free from irritants, the
utilization rate of the rice bran protein is high, and the prepared rice bran protein can be applied to clinical nutrients, weight-reducing health-care products, beverage making products and food auxiliary materials.
