The invention belongs to the technical field of aquatic product processing, and discloses a method for preparing instant-cooking jewfish products by combining subacid electrolyzed water with an ultrahigh pressure technology. According to the invention, a subacid electrolyzed water process, a pickling and fishy smell removal process, a seasoning process and an ultrahigh pressure sterilization treatment process are successfully optimized. The SAEW treatment can maintain the color and texture stability of the fish meat. The content of fishy smell substances such as hexanal, heptanal and dimethyl trisulfide is remarkably reduced through pickling and cooking, aromatic substances such as limonene and alpha-terpilenol are generated, and the finished product is more harmonious in flavor and distinct in layer. The ultrahigh-pressure treatment can prolong the storage period and maintain the texture and taste of the fish meat.
