meal. The method comprises the following steps: firstly, crushing the corn germ
meal, then adding water into the crushed corn germ
meal, uniformly stirring the water and the corn germ meal till the turbid liquid is formed, and performing
pasteurization at 85 DEG C; secondly, naturally cooling the turbid liquid, adjusting the pH value of the turbid liquid to 8.0 to 8.5 through a 0.1mol / l NaOH solution when the temperature of the turbid liquid is stabilized at 40 DEG C; thirdly, adding compound
protease to perform enzymolysis to obtain the enzymatic
hydrolysate; fourthly, adding Alacalase-2.4 liquid and
papain into the enzymatic
hydrolysate obtained in the third step to perform enzymolysis continuously, performing
enzyme deactivation and
centrifugal separation, taking the liquid supernatant, heating the liquid supernatant to evaporate
moisture, and obtaining the albumen
powder product after
drying. Through the adoption of the method for extracting albumen
powder from corn germ meal, both corn germ
protein which is denatured at high temperature and corn germ
protein which is not denatured can be used for extracting albumen powder. The method is wide in application scope, and various corn germ materials can be adopted.
