The invention discloses a process for production of a coarse cereal beverage, and the process is as follows: 1) choosing one or more substance form sorghum, millet, corn, soybean, glutinous rice, mung beans, oats, buckwheat and black rice, and choosing one or more substance form peanut kernels, almonds, hazelnuts, walnut kernels, chestnuts, melon seeds and sesame seeds; grinding or crushing the chosen raw materials in an appropriate ratio; 2) gelatinizing, to be more specific, mixing the ground and crushed raw materials, adding sugar and a stabilizer, adding water, evenly mixing, heating, boiling for gelatinizing, keeping the gelatinized raw material warm and regulating the temperature; 3) homogenizing, to be more specific, crushing by high-speed shearing, and expanding under high pressure to fully crush and soften seed raw material skin; and 4) sterilizing. By the provided process, coarse cereal skin is thoroughly crushed and softened to fully release nutritional components in coarse cereals. The coarse cereal beverage is rich in dietary fiber, very delicate in taste, and easily accepted by the public, and the nutritional components are easily absorbed by the body.
