When the gardenia yellow pigment obtained by the production method provided by the invention is prepared into a preparation, precipitates are not easy to generated during refrigeration, and the preparation has a wide application scope. In addition, the production method of the gardenia yellow pigment of the invention has a simple process, and high production efficiency, and is applicable to industrial production.
