The invention provides a maca fruit juice beverage which comprises a maca extract, apple juice and apple vinegar and is characterized in that a mass ratio of the maca extract to the apple juice to the apple vinegar is 30:(68-75):(1.5-2.5). A preparation technology of the beverage comprises the steps of: 1, removing impurities from fresh maca, after cleaning, soaking, cooking and filtering to form filtrate, namely the maca extract, 2, removing impurities from a fresh apple, cleaning, juicing, enzymolysing, filtering to form filtrate, namely the apple juice, 3, intensively mixing the maca extract, the apple juice and the apple vinegar at the mass ratio of 30:(68-75):(1.5-2.5), and 4, sterilizing, filling, performing shrink labeling on, packaging and warehousing the maca fruit juice beverage. The product comprises nutritional ingredients of the maca, the apple juice and the apple vinegar, is nutrient-rich, good in taste, alcohol-free and low in sugar content, and is suitable for wide populations. No sugar or additive is added in a preparation process, no harm is caused to a human body, and the beverage is safe and healthy.
