The invention relates to soybean
oligopeptide powder. The soybean
oligopeptide powder comprises the following raw materials in parts by
mass: 88-95% of soybean oligopeptides, 4-10% of
stachyose, 0.7-1.4% of
glycine, and 0.3-0.6% of
aspartame. A preparation method of the soybean
oligopeptide powder comprises the following steps: step 1, dispersing and hydrolyzing
soybean protein isolate powder, namely blending the
soybean protein isolate powder with deionized water so as to obtain
protein pulp, and carrying out shearing so as to have the
protein pulp dispersed and hydrated; step 2, carrying outultra-
filtration while performing
enzymatic hydrolysis, namely regulating the pH value of the
hydrolyzed protein pulp to 8-9, adding compound
protease of which the
mass is equivalent to 1-4% of the
mass of the
soybean protein isolate powder, and carrying out
enzymatic hydrolysis by performing agitation at 50-55 DEG C for 3-4 h, wherein the whole
enzymatic hydrolysis process is carried in an agitation-
ultrafiltration device; and step 3, obtaining a filtrate subjected to the agitation-
ultrafiltration after completion of enzymatic
hydrolysis, adding the
stachyose, the
glycine and the
aspartame into the filtrate, carrying out uniform stirring, and carrying out concentrating, sterilizing and spray-
drying so as to obtain the soybean oligopeptide powder. The soybean oligopeptide powder preparedby the preparation method has higher physiological activity.
